“I’ll have the ground beef burrito with queso sauce”, I said mid-bite of a tortilla chip, with a little salsa still hanging on for dear life at the corner of my 13-year old mouth.
I always ordered the same thing. No vegetables. No Pico de Gallo with those aggressive chunks of tomatoes & onion. None of those weird-tasting foods that my Mom was always eating like sour cream. Even the name of that food was telling us to stay away!
I played it safe & it worked for me.
Then a friend & her family invited me to go to a different Mexican restaurant. I ordered my usual, but this one came with something called enchilada sauce.
Not being a Spanish speaker, I assumed it meant cheese-adjacent.
It did not.
When the plate arrived, I sat in stunned silence at the sight. I had zero kitchen skills beyond boiling a hot dog but even I knew that the dark brownish-red sauce covering the ENTIRE PLATE was not going to be cheesy.
Under normal circumstances, I would have negotiated a trade. This time, I knew I had made my bed & was about to lie in it.
I prepared myself to go hungry.
Ladies & gentleman, I would have licked that plate clean. (Seriously, I’m not above it & may done it more recently than I care to admit.)
That sauce changed my favorite burrito into this rich, savory experience way better than anything I would have ordered on my own.
And my play-it-safe approach would have kept me from ever becoming the person I am today.
